ROASTERS’ CUP – EL DIVISO
ABOUT THIS COFFEE
From Huila’s Bruselas region of Colombia, this Sidra varietal is grown at 1,750 MASL on El Diviso, a 14.5-hectare farm shaded by native and fruit trees. Five years ago, brothers Nestor and Adrian Lasso teamed up with Jhoan Vergara and alongside Cat & Pierre of CATA Export committed to specialty coffee, rigorous experimentation, and process discipline. Today these coffees have been used in many barista competitions across Europe.
Process perfection, step by step:
Hand-picked at full maturity, the cherries undergo carefully staged oxidative and anaerobic fermentations, including a submerged fermentation in recirculated coffee must, before slow marquesina drying to 11% moisture. Precision at every turn, purpose-built for clarity and expression.
This is a small-batch release, crafted by people who stayed in coffee because passion won out.
