At the COMSA Cooperative in Honduras, they embrace the new and different. To create this intensely fruit-forward speciality coffee, these producers have used a natural process, an approach that’s quite tricky to manage due to the humid climate.

Coffee cherries are handpicked and dried as whole fruit. This process takes several weeks and, during that time, all the delicious fruit sugars from the coffee cherry are absorbed into the coffee bean. Once dry, the coffee beans are removed from the dried fruit. We lightly roast to amplify these fruit flavours.

Taste Notes: Intensely fruity and sweet. Rich plum with a hint of port. Full-bodied and chocolatey on the finish.
