ABOUT THIS COFFEE
From Guatemala’s Acatenango region, this Caturra lot comes from Finca La Senda, a meticulously managed farm in the foothills of the Acatenango volcano. Producer Maria Eugenia Escobar focuses on small, highly controlled fermentations that push flavour while keeping the cup clean and composed.
Process perfection, step by step:
Hand-picked at full maturity, cherries are sealed for an extended anaerobic fermentation before being dried as a natural, then rested in GrainPro to lock in aromatics and sweetness. The result is a cup loaded with cooked blackcurrant, raisin and toasted nuts, lifted by winey acidity and a smooth, dessert-like finish.
