ROASTERS’ CUP – Toliman
ABOUT THIS COFFEE
San Lucas Tolimán (Anaerobic Natural) is bold but balanced. Notes of red grape, lemon icing and caster sugar, with a lifted acidity and a smooth, lively finish.
This coffee is Anaerobic Natural (process). Fresh cherries are fermented in a sealed environment, intensifying fruit character and sharpening the acidity while adding structure and depth.
Grown at 1550 MASL in the Atitlán region of Guatemala, this microlot comes from Finca Pampojilá, a historic farm dating back to the 1850s. Now operated by Agropecuaria Atitlán, the farm combines innovative processing with a strong commitment to sustainability – with half the land preserved as tropical forest.
This is a small-batch release from people obsessed with process, clarity and expression in the cup. Here for a limited time.
